I have the 6.0 in the 2500HD. Its held up good but the motor is pretty lame pulling the boat.

I've heard great things about the 5.3 but after owning one, I wouldn't do it again. Good for around town stuff, but definitely not for pullin our VE.

My 6.0 pulls like crazy, gets horrible mileage and is comfy

I know where Dingles boat is parked and I know how to switch out the ignition

And octane is all about flashpoint and controlling per-ignition, not about power, but as stated, if you increase compression you can squeak out a bit more energy from the fuel but you need to run a higher octane to prevent preignition which is also called knock.
