For you ballast pro's (xpjim1) , how do you think this pump would work for a two bag set-up? I found it on ebay, I think it is a 800 gph.

just to point out the obvious, it will fill both sacs at the same time unless you install 2 ball valves. These will be hard to reach though. That will work, just depends on what you want out of your system.
The Attwood Tsunami T800 pumps are only $25 bucks at many online stores. Did you use 1200's or 800's?
I went with the T800's. Too many headaches with the 1-1/8 fitting on the T1200's

Those pumps will allow backflow, and because they are not self priming, need to be mounted as low as possible in the bilge. Because of this, they can allow the sacs to drain.
